Garlic Eggplant (蒜茸炒茄子)
Garlic Eggplant (蒜茸炒茄子)
Ingredients:

3 eggplants (brinjals)
6 cloves garlic (more garlic will more nicer)
2 stalc Chinese celery
1/2 tbsp peppercorns
2 big tbsps dried shrimp 

Seasoning:

1) 1 tbsp salt
    4 cups water

2) 2 tbsps soy sauce
    1/2  tbsps salt
    1/2  tbsps sugar
    1/2  tbsps sesame oil

Method:
  1. Cut eggplant into 3 equal sections. Soak in Seasoning (1) for 5 minutes and drain.
  2. Halve each section. Deep fry until soft. Remove and set aside. Using the balance of the oil, stir fry dried shrimp until litter fragrant and set aside. 
  3. Heat wok with 2 tbsps of oil. Stir fry peppercorns until fragrant. Remove and discard peppercorns. Add chopped garlic, dried shrimp and Seosoning (2). Stir Briefly.Return eggplants and cook until sauce flavour is absorbed. Garnish with chopped Chinese celery. Dish up and serve.
材料:

茄子                 3 条
大蒜                 6 瓣(放多无拘)
香菜                 2 棵
胡椒粒             1/2 大匙
虾米                 2 大匙


调味料:

1)盐              1大匙
      清水          4杯

2)酱油          2大匙
      盐              1/2 大匙
      糖              1/2 大匙
      麻油          1/2 大匙


做法:

  1. 茄子切成三等份长段,放入调味料(1)中浸泡5分钟,捞出。 
  2. 将每段茄子对剖为二,放入热油中炸软捞出。再把虾米放入爆香捞出。 
  3. 另用2大匙油爆香胡椒粒后捞除,做成椒油,再放入切碎的蒜末,及爆香了的虾米和调味料(2)炒匀,加入茄子烧入味后,撒下切好的香菜末盛出即可。
